Foraged and Found is a series that pays tribute to our love for the natural environment and the wonders that is affords us.
Spruce was brewed together with our new friends Burnt Mill. We steeped locally foraged spruce tips overnight in the brewing water, which we then mashed with Pils, Vienna and wheat malts.
The resulting wort was whirlpooled with Relax & Saaz hops and fermented with our house saison yeast strain. Spruce offers complex floral aromas; the palate reveals notes of clementine peel bitterness, with a mouth puckering dryness.
